From MasterChef Australia to Japanese culinary expert and now, All Nippon Airways (ANA), Adam Liaw is taking his cooking skills 30,000 feet in the air as the culinary ambassador of Japan’s only 5-star airline.

The former reality TV show contestant was this week appointed by the international airline to satisfy its guests’ taste buds through meticulously crafted menus for Business Class, Premium Economy and Economy Class passengers.

When creating dishes, Liaw was required to pay particular attention to detail, which ANA prides itself on, while also creatively utilising local products and fine ingredients.

Liaw said that with these guidelines, a great Australia-based team and close collaboration with the ANA team, he’s managed to deliver flavoursome dishes, which he expects will both surprise and treat passenger.

“In-flight Dining is a lot more complex than an ordinary meal on the ground, from the timing of service and the visual presentation of dishes, all the way down to the seasonality of dishes.”

“The biology and psychology of air travel changes depending on the way we appreciate food.

“Taking that complexity into account has allowed us to be really creative with these menus, and over months of working with the team at ANA we’ve developed a suite of dishes that I’m really proud of, and that I’m sure ANA’s passengers will love.”
