Quark Expedition has upped the expedition cruising game with its new onboard cultural dining experience, ‘Tundra to Table: Inuit Culinary Experience’.

This one-of-a-kind culinary experience, available on select Arctic 2022 and 2023 cruises, perfectly encapsulates the very essence of Inuit food and culture and will tantalise your tastebuds, too.

An authentic and immersive journey through the culinary arts, Tundra to Table allows you to savour the stories of the Arctic destinations you visit and experience the world from a new perspective.

“These relationships have inspired us to provide this platform, Tundra to Table: Inuit Culinary Experience, for local chefs in the Arctic to showcase the Inuit cuisine and culture of Greenland and Nunavut.

The ultimate purpose of this culinary experience is to support Inuit chefs as they share the stories of their people through food.”

Quark Expeditions Tundra to Table

At the heart of this endeavour is the purity of the ingredients, such as seafood caught fresh from the Arctic waters, and free-roaming game that consume naturally organic grass and vegetation.

Dishes will vary from trip to trip but could include: pickled halibut, dried halibut and fried halibut served with lumpfish dip and bread; South Greenlandic lamb served with pommes Anna (layers of sliced potatoes), sweet turnip ragu, pickled angelica and wild gravy; and beer-braised muskox served with Greenlandic mashed potatoes, mushroom sauce and berry jam; and honey-glazed ptarmigan served with turnip purée.

The program is hosted by local Inuit chefs who are experts in Indigenous cuisine. These chefs will share the stories of their people through the food they prepare.

Every dish you will eat during this on-ship experience will reflect the culinary traditions of the region of your voyage, whether it’s muskox in Greenland or Arctic char in Nunavut.
