Friday Cocktail: Cold Pressed Spirits at The Swinging Cat

Cold pressed juices have been sweeping the nation for a while now and the trendy way of extracting maximum flavour (and nutrition) has now reached the Sydney bar – The Swinging Cat!

The Swinging Cat, a New Orleans bar located in the heart of the Sydney CBD, has taken inspiration from the technique of cold-pressed juicing and crafted cold-pressed spirits – spirits infused and pressed with dried fruits, seeds and spices.

These innovative spirits are being showcased in a new cocktail menu which features six delicious cocktails consisting of refreshing yet punchy flavours:

-Rue Desire: dried banana infused dark rum

-Toulouse Street: dried apricots and thyme

-Magnolia: dried peach julep

-Belle Chasse: a toasted cocoa nib espresso martini

-Bourbon St: dried figs and walnuts and lastly,

-Elysian Fields Ave: a modern twist on a tropical favourite, the Mai

Inspired by the health trend, Pete Fischer, owner of The Swinging Cat, is the mastermind behind the innovative technique and outlines that they use dried fruits and nuts instead of fresh ingredients.

“When you order a green juice or smoothie at a café they use fresh ingredients, though we choose to use dried fruits and nuts because they contain concentrated sugars and flavours as all the moisture has been removed in the drying process. This leaves a raw nectar which gives a sharp and delicious liquid that adds more flavour and texture to each and every cocktail.”

Cold-pressing is the technique of juicing that ‘presses’ the fruit to retain vitamins, minerals and enzymes.

To create the liquid, Pete and his team run the infused spirit through the cold-press to create a rich and powerful syrup that is used as the base for creating cocktails.

“We wanted to offer our guests a completely unique drinking experience, like no other. We took inspiration from the work of Heston Blumenthal who completely thinks outside the box. We use a top of the range stainless steel cold-press to ensure we are producing the best syrups and nectars for our cocktails.

The Swinging Cat is located at 44 King Street, and offers live music every Tuesday, Thursday and Saturday night, all set against the backdrop of authentic furnishings straight out of New Orleans.
