We can’t do Australia, without a good Australian spirit based cocktail. Here’s a cracking gin from the Yarra – Four Pillars.
The Yarra Valley is the name given to the region surrounding the Yarra River in Victoria. It’s known for great high-quality chardonnay, pinot noir and sparkling wine.
It’s wine country, but they also make, in the words of Four Pillars co-founder Stuart Gregor, “The world’s best gin”.
They seem to be on the money winning Double Gold medal at the San Francisco World Spirits Competition and a Silver at the London International Wine & Spirits Competition in the past six months.
But why is it called Four Pillars?
“Well, there are two stories – the one for publication is that we are building this business and the gin on four pillars – our still, the water, simply excellent botanicals and a passion for craft. “The other story of why it’s called Four Pillars might slip out after a few Negronis. Let’s just say it’s a little more ‘colourful’ than the version that appears on the bottle,”

Ingredients
45 mL Four Pillars Rare Dry Gin
15mL Averna
30mL Blood Orange Juice
Soda Water
Rosemary to garnish
Method
Mix the gin, Averna and blood orange juice over ice in a highball glass, charge with soda and garnish with a sprig of fresh rosemary.
