No one is quite sure who invented the margarita, there are numerous theories out there, however whichever you subscribe to we can all agree on one thing – it’s a hell of a refreshing cocktail.

What we can all probably agree on as well is that every good margarita is served with a salted rim, which by the way isn’t there just for decoration. The purpose of the iconic salty margarita rim is to simply bring out the sweet and sour flavours of the cocktail (plus kill any bitterness).

So is there such thing as a ‘chilli margarita’ you might ask? Well, it sure is…

Inspired by the laid-back beach lifestyle of Baja-California, Mad Mex, well known for their fresh, gourmet made-to-order Baja Mexican dishes, has teamed up with Los Cabos Tourism to create this spicy cocktail number just in time for summer.

Mad Mex’s new chilli cocktail is a reflexion of the food chain’s philosophy which is anchored in fresh ingredients and authentic flavours with a healthy dose of Mexican spice.

Partnering with Los Cabos Tourism, and named after one of the best beaches in Baja California, Mad Mex created the Playa Solmar’ Chilli Margarita – made from tequila, fresh lime juice and a chilli and lime salted rim – muy caliente!

‘Solmar’ translates to Sun Sea – and the ‘Playa Solmar’ Chilli Margarita translates to sunshine in a glass. So there you have it, a refreshing chilli margarita for the weekend.

‘Playa Solmar’ Chilli Margarita

60ml blanco tequila

30ml orange liqueur (Cointreau or triple sec)

50ml freshly squeezed lime juice

1 cup roughly crushed ice

Lime wedges

Chilli salt

 

To make the margaritas:

Rub the rim of an old-fashioned cocktail glass with a lime wedge

Dip the rim of the glass in the chilli salt to lightly coat. Add ice cubes to the glass.

In a cocktail shaker filled with ice, combine the tequila, liqueur and lime juice. Shake vigorously for 20 seconds, then strain into the prepared glass and serve with a lime wedge.
