First look: historic NSW estate reopens after $10 million transformation

The completion of the multi-million-dollar renovation sees Ardour Milton Park Bowral become the debut property in Australia’s newest luxury hotel collection, Ardour Hotels and Estates, by Salter Brothers.

Salter Brothers Hospitality CEO Tash Tobias says, “Milton Park has always held a special place in the hearts of so many”.

“With the Ardour brand, we’re creating something that’s not just luxurious, but deeply meaningful – a place people will come back to year after year.”

Every space was transformed

The transformation saw every space in the hotel transformed. Guest lounges, the bar, billiards room, terraces, and private dining areas were all refreshed while “honouring the original architectural bones of the ​​manor”.

There are new bespoke wool carpets, marble and walnut finishes, brushed brass accents, and custom-curated minibars, while a mural feature wall in every room pays homage to the estate’s famed weeping beech tree within Milton Park’s historic gardens. 

Signature dining includes Horderns and The Polo Bar, with a spa and wellness offering to follow.

Ardour Milton Park Bowral general manager David McDonald says, “We are eager to welcome guests back to Milton Park to showcase the depth of care that has gone into every detail, from the accommodation, our new spa offering to the dining experience at Horderns”.

“This is just the beginning, with The Polo Bar’s charcuterie room and our new Èliva Wellness Spa set to follow and further enrich the guest experience”.

Ardour Hotels and Resorts also recently announced it’d signed two luxury properties in two of Australia’s leading wine regions.

Spicers Guesthouse Hunter Valley and Kingsford The Barossa will join the collection this year.

Tobias says with the demand for experiential, design-led travel in regional Australia at an all-time high, Ardour’s 2026 expansion signals “a new era for luxury hospitality in the country’s most sought-after wine regions”. 

Lilianfels Blue Mountains Resort & Spa is also undergoing a multi-million-dollar transformation to join the hotel group and has remained open during the renovation period, with an official reopening mid-2026.
