Mandarin Oriental taps Michelin-starred talent and unveils plans for landmark renovations

The Mandarin, Hong Kong and the Mandarin Oriental, Bangkok will undergo 'unprecedented' multimillion-dollar renovations and add Michelin-starred chefs to both properties.

The Mandarin, Hong Kong and the Mandarin Oriental, Bangkok will undergo ‘unprecedented’ multimillion-dollar renovations and add Michelin-starred chefs to both properties.

In a move to “ensure both properties retain and strengthen their position as the most exceptional luxury hotels in their respective cities”, the hotels will have new rooms, wellness experiences, and the addition of leading chefs: Anne-Sophie Pic, Alex Dilling, Chef Fe, Daniel Boulud and Daniele Cason.

More than US$100 million will be poured into Mandarin Oriental, Hong Kong with “sustainability best practices” at the forefront of the renovation.

There will be a complete redesign of all public spaces, as well as a new Whisky Bar incorporating “a discrete and stylish cigar divan”.

Guestrooms and suites will be refreshed with the addition of 11 new apartments, while a new Wellness Club concept will be added, providing a “serene retreat from the bustling city life”.

The hotel’s cake shop will get a facelift, as will Mandarin Grill + Bar and the Clipper Lounge, while an exclusive pizza counter with a wine pairing will be added, and New York-based Michelin-starred Chef Daniel Boulud will bring his French cuisine to Hong Kong for the first time.

Ahead of the hotel’s 150th anniversary in 2026, the Bangkok property will see all of its accommodation refreshed, and Anne-Sophie Pic, the most awarded female chef in the world, will be making her debut in Thailand with Le Normandie – a multi-sensory gastronomic journey.

The hotel will also partner with Michelin-starred chef Alex Dilling at Lord Jim’s to bring a ”more relaxed take on luxury dining, centred on cooking over fire”.

Michelin-starred Chef Fei, who already has award-winning restaurants in Mandarin Oriental hotels in Guangzhou, Shenzhen and Qianmen, Beijing will join the two-storey China House.

While Baan Phraya, the historic Thai house riverside next to The Oriental Spa, will also have a “significant remodelling to bring a refined elegance to the environs of the heritage home housing the restaurant”, paying homage to Thailand’s architectural heritage.

The hotel’s fitness centre will also get a redesign, offering “a dynamic wellness experience, blending traditional forms of Thai wellness and fitness with internationally recognised vitality programmes”.

Renovation of both hotels will be completed in 2026.
