QT Singapore announces new dining experiences led by Chef Sean Connolly

Ahead of its September '24 opening, QT Singapore has unveiled details of its dining experiences to be led by award-winning Australian chef and restaurateur, Sean Connolly.

Ahead of its September ’24 opening, QT Singapore has unveiled details of its dining experiences to be led by award-winning Australian chef and restaurateur, Sean Connolly.

Connolly, who oversees the dining experience at Gowings at QT Sydney and Esther at QT Auckland, will also now fulfil the role of QT Singapore Creative Director of Food & Beverage.

Within the heritage building, which was formerly the Hotel Telegraph, QT Singapore will feature two key venues:  a brand-new bar and grill, Cygnet, with a Manhattan steakhouse vibe; and the  Rooftop at QT – completely transforming the rooftop into a must-visit pool and bar for cocktails and drinks.

“QT Hotels have consistently redefined hotel food and beverage experiences and I’m excited to introduce to Singapore – a haven for food enthusiasts – an approachable bar and grill experience in the form of Cygnet,” said Chef Sean Connolly.

“My cooking philosophy starts with sourcing the best ingredients from around the world, cooking with French influence, bringing authenticity to the table and most of all, having some fun. Cygnet and Rooftop by QT promise to enhance the already vibrant local food and beverage scene, and perfectly complements the eclectic ambience that awaits guests at QT Singapore,” he said.

At Cygnet, Connolly’s menu will focus on the origins of ingredients. The Steak Library will offer premium meats including Tajima Japanese Wagyu Rump and Australian grass fed Riverine Rib Eye, alongside Chef Sean’s signature duck fat roast potatoes. 

The cocktail menu at Cygnet is inspired by New York with table-side service evoking a sense of old world glamour. The extensive wine list includes more than 30 wines by the glass. 

Cygnet will also feature two private dining rooms for hand crafted dining experiences.

Rooftop at QT Singapore will offer views of the Lion City’s skyline, an extensive cocktails and drinks menu, and a swimming pool.  

QT Singapore will be located at 35 Robinson Road. The property, owned by Sunray Singapore, is currently undergoing a complete transformation to QT Singapore and will become QT’s first Southeast Asian hotel when it opens.
