Restaurant royalty hospitality extends to The Grand National Hotel by Saint Peter in Sydney

The team behind lauded Sydney restaurant Saint Peter (and the soon-to-open The Sundays on Hamilton Island) will expand into petite boutique stays with The Grand National Hotel opening in the Sydney suburb of Paddington on 31 January 2025.

The team behind lauded Sydney restaurant Saint Peter (and the soon-to-open The Sundays on Hamilton Island) will expand into petite boutique stays with The Grand National Hotel opening in the Sydney suburb of Paddington on 31 January 2025.

Now available to book, the 14-room luxury hotel is situated directly above the award-winning Saint Peter restaurant and bar on the site of a former 19th-century pub.

The Grand National Hotel marks restaurateur couple Josh and Julie Niland’s first foray as hoteliers and includes 14 individually designed bedrooms, the three-hatted restaurant, a bar and a private dining room and chefs table.

The hotel is situated on the second floor above the Saint Peter restaurant and bar.

Many original building features remain, such as marble fireplaces, architraves and vintage tiles, alongside heritage-inspired vibrant and elaborate interiors that contrast with the restaurant’s more muted mood, which reflects Australian landscapes.

Guests can expect sumptuous fabrics and luxurious soft furnishings in rooms that offer elegant, modern comfort inclusive of a complimentary minibar and snacks and breakfast served in the Saint Peter Bar with a rotating menu referencing Saint Peter Brunch favourites.

Elegant, modern design complements the classic heritage building.

Chef Josh Niland’s whole fish philosophy has also filtered into the hotel amenities, with the rooms featuring fish-fat candles and ceramics made from fish bones. Artwork curated by Olsens Gallery will showcase emerging and established Australian artists, such as Ken Done.

Julie Niland said The Grand National Hotel by Saint Peter reflects the same attention to detail as the restaurant.

“This is our first venture into being hoteliers and we knew that we wanted to apply the same level of care to the rooms so that they weren’t just an addition to Saint Peter but a destination in their own right,” she said.

Marble fireplaces and vintage tiles were restored in the refurbishment.

Josh Niland added: “We want the restaurant and the rooms to complement each other as much as possible. Opening the hotel allows us the opportunity to fulfil our vision of hospitality beyond dining into a thoughtful 360-degree hotel experience, from handmade chocolates on your pillow to the breakfast cooked by our team.”
