Southern Hemisphere’s leading multi-art form festival, Vivid Sydney is promising an all-new immersive experience for 2024 dubbed, Dark Spectrum: A New Journey, with state-of-the-art lighting, laser and video effects unlike anything seen before.
Kicking off on 24th May, this year’s event will be a spectacle of illumination, including a 40-kilometre-long laser beam projected from the Sydney Tower and 4,000 solar-powered candles at Barangaroo Reserve.
Aster launches new menu to celebrate Vivid Sydney
There are few better places to catch a bird’s-eye view of the harbour than rooftop bar, Aster. Located on the 32nd floor of InterContinental Sydney, the bar opened to the public in 2022 for the first time in the hotel’s history.
For Vivid, Aster has launched a new menu to graze on while you soak up the unparalleled views across Sydney’s harbourside, including Sydney Harbour Bridge, Sydney Opera House, and the Royal Botanic Gardens.
Created specifically for the event, you’ll start with a palate cleanser, then two cocktails themed around sustainability and human endeavour.
Each cocktail is paired with a two-course small plate, featuring local produce. Think: Sydney rock oyster, finger line and ginger dressing; Hervey Bay scallop crudo, gochujand dressing and seaweed, and an Australian cheese selection, quince paste and wattle seed lavosh.
Cocktails include options like Earth 35, a mix of Los Arcos tequila, jalapeno, matcha, cucumber, capsicum and lime, and The Passage, a combination of Coastal Stone Xplore whisky, olive oil, verjuice, rinquinquin, lemon myrtle, strawberry gum and carbonate.
Vivid Sydney runs from 24 May – 15 June 2024. Dark Spectrum: A New Journey is open every day from 12pm until 9.15pm (except for Friday 24 May 2024 when the event will open at 6pm).
